I think oversampling has do to with an increase in resolution. I read that it's the "number of subpixels to sample to produce each output pixel", whatever that means.
I'm not familiar with HP Image zone, but another free program you might like is GIMP. It's usually found in Linux computers, but it also has Mac and Windows versions.
