A Recipe for Awesome

Food!

So heres what you need for a simple but tasty meal that should work for most kids as well.

1.25 lbs chicken breasts
9oz mini ravioli or tortellini
about 2 cups halved small cherry tomatoes
either chopped fresh sage or the dried stuff
if you have sweet paprika use that, otherwise regular is fine
about 2tbs red wine vinegar
1/3 cup chicken broth
3 cloves of garlic thinly sliced
preferably fresh grated Parmesan

optional:
about 7 oz chopped Cermini mushrooms
or
1 medium sweet yellow onion sliced

Directions

Pre-meal: use some olive oil make a rub with the sage and paprika. Coat the chicken well and let sit in the frige for ad least three hours. I let mine sit over night.

1. Boil up some water and cook the pasta till just about cooked. Drain and mix with some olive oil and set aside

2. Cube the chicken and cook, in a decent sized pan with somewhat deep sides. (example, this is just to give an example of shape) on around medium high heat with olive oil till it starts to brown, about 4-5 minutes. Take out of pan and set aside in something that can be covered. I used tupperware.

3. Now, if you chop the veggies right, most kids won't notice.

I'll start with if you are using the shrooms:

Add more olive oil and the mushrooms. cook for about 2 min and add some salt and pepper and cook for about 3-4 more mins. Then add the vinigar, garlic and tomatoes. Cook until the tomatoes are softish and then add the chicken, the pasta, about 3 tbs parmesan, and the chicken broth. Bring to a good simmer and leave, stirring occasionally till the chicken is fully cooked.

If you are doing the onions:

Reduce to medium heat. Again add more olive oil and then add the onion and garlic. Cook for like 4-5 mins, till the onion starts to get soft but before the garlic starts to brown. then add the vinegar and tomatoes. Cook until the tomatoes are softish and then add the chicken, the pasta, about 3 tbs parmesan, and the chicken broth. Bring to a good simmer and leave, stirring occasionally till the chicken is fully cooked.

You can cook a little past that if you want to reduce the sauce some.

Serve in bowls and top with more cheese and if you want, some parsley.
