Doctor Fan gets a chance to be on a show

Chinese people eating a fish that appears to still be alive.

Coincidentally, soon after watching this for the first time, I read an article for my Intern'tl Studies class about Hong Kong fish markets and how much the Chinese value freshness in their seafood.

My friends & family have speculated how this is possible, and the consensus seems to be that the fish was kept in water, then was taken out and immediately put onto a frying pan. Then the outer meat was quickly cooked, but I guess not enough to fry its inner organs? Or are fish heads really that hardy? o_O
