And I know what you mean! Usually I just do one layer, depending on what my mood is... Which is usually why I don't paint the whole character with water colors, lol! Sometimes more than one layer is good enough though.
And watercolors are fun. I've been experimenting with them a little bit lately, painting tree and stuff. The hardest part is letting things dry before painting the next layer! I can be an impatient person sometimes.
