The death of Maes Hughes, FMA.
Other than that, I do not believe I would change anything. Maybe not even the tragic death of Hughes, because it happened. And undoing things that happened isn't my wish (damn you Fate Stay Night for teaching me this ideal!!)
I just finished watching Cowboy Bebop last night for the first time. Spikes death!! Dear God!!!! I expected it the whole time, yet I wanted to deny it. Then it was so sad when Ed left Though she was really just comic relief, she was a great addition to the crew. But, I now understand completely why it is claimed to be one of the best anime. I can now whole heartily back that claim til the end of time. See you space cowboy.

I would undo Aram dying and Ha Ji waking up from her comatose state with no memories of her body switching experience with Aram. It happens around volume 11 and I feel that after this the series took a turn for the worse: the guys are acting extremely creepy and downright illegal, all the characters become hypocrites and the memory loss plot device is so overdone that it's painful to read about.
It became so different from the original plot (which wasn't original but was at least entertaining) that I'm not sure I want to finish this series anymore. All the characters are assholes, I'm not rooting for anyone and don't care what happens to them anymore because they've suffered a complete personality change :/
I have no problem with characters dying, btw, and from reading the comments I'd have to disagree with L (Death Note) and Wolfwood (Trigun)'s deaths; they made perfect sense in advancing the story. Light and L had to have a confrontation or the cat and mouse game would've become too drawn out otherwise, and Wolfwood's death served as an even bigger motivation for Vash to go after Legato and Knives.

If given the chance, I'd undo Kamina's tragic death in ep. 8 of Gurren Lagann, but I would have to first save Simon from what caused him to suffer distraction during the day of that tragic moment so that Team Dai-Guren could win the day without any loss of members, and Kamina and Yoko could have a future together.
Hmm...I would definitely keep Yamato alive in the anime version of Devil Survivor 2. I don't see why he had to die in the first place... then again, the anime doesn't follow the game all the way through :/
I would say "Another" since the cursed class should've just told Kouichi. I mean seriously, if he didn't know, why wouldn't he talk to Mei? Wtf...but I guess if they had told him first off, the series would've lost the first few deaths...

Hughes death in FMA. Although in Brotherhood if it hadn't happened I'm not sure if Roy would have had enough rage to blast those homunculus to oblivion like he did.
Higurashi no naku koro ni: Keiichi giving that friendship speech to Rena at the end of the show. It annoyed me so much I couldn't stop laughing. Say what u want but a scene like that after all those murders? No. Just... No.
That is exactly what I think. I think it's ridiculous how easy all the antagonists died, yet how the protagonists could recovor from worse things in what probably would have been under an hour. It didn't have to be one of the main characters, but SOMEBODY should have died, like Sid or something, to show exactly how serious the battle really is.
I would redo the death of L. I cried for a week, then I saw this posty-thingy that said: "L didn't die he just went to Bleach in the from of Ulquiorra". I loved Ulquiorra as well! and then what he died too!! Urg but I can't complain, their deaths only made me love them more! I would also like Jiraiya to come back to Naruto, I really liked the old Hentai!!
Like the others said, it would have to be the death of L in Death Note. The rivalry between L and Light, as well as their short-lived team-up, was what really made Death Note amazing to watch. After that event, it just felt a bit depressing that you just want to know how it would end.
Another would be Athrun breaking up with Cagalli in Gundam Seed Destiny. I'm not really into love teams nor am I a huge fan of Gundam Seed, but I thought the two were quite a couple. Seeing Athrun go for a lesser known character just felt out of place, especially since the show (at least in my case) didn't let the character develop so that we could really see her as a better match for Athrun.
And lastly, the ending to Canvas 2. An older male cousin (who also works as a teacher) and his younger female cousin (who appears to be a student in the former's school). Seeing the final scene of the show felt so wrong to me that I somehow curse the fact that my brother even thought about bringing a DVD of that show. "It will be fun," he said. "The animation is good," he said. Well, big mistake.
Guh.. at the end of the Pet Girl of Sakurasou,when Sorata and Shiina were about to kiss, the cat totally trolled them... i would have loved to take out that cat and actually see them kiss. The end was beautiful, but that would have made it more perfect.
I don't think there's anything I would change in any series I've read...

Even the deaths of favorite characters... it'd be nice if they lived yeah, but then the story I love so much would be completely different!
Exactly, there was no point to killing her off. I was fine when they killed Kamina off because that actually served a purpose. But there was simply no point to killing off Nia except to ruin the series.
Sorry to post so many times in a row, but here's one opinion of my own. I bet I have more things I want to say about different series, but I'll give you just this for now.

Heck, I would have rewritten a lot of Sasuke's character. I understand that the events of his past would shape who he is when the series starts, but over time I'd have him warm up to Naruto as a friend and THEN they would have a falling-out. Naruto being bent on saving Sasuke would make more sense if they had actually had been friends, even if only briefly.
Speaking of Naruto, I would explain a lot more about why the characters look the way they do. Yes, Kisame looks like a shark-man. Why? It's not enough to say he's from the Hidden Mist where they're all about Water Style stuff. I want to know why his skin is blue. If anyone has a theory about this, I'd be happy to hear it.
That gives me an idea. Adam, for a future topic, maybe you could make it about head-cannon. You know, what fans make up about characters to fill in the blanks.

I didn't really buy it, especially after the whole thing with Kamina. Also, if he knew she was going to die, what was the point of him rescuing her anyway? To me, if the anime had an altered ending, that would have made it just about perfect. There were other things that they could have played up too, such as Viral's immortality.

This is something of a spoiler, but I'd change the ending of Gurren Lagann and prevent Nia's death during the wedding. There was absolutely no point to it and is just ruined the whole series for me.
Also, shame on Aku no Hana for not going twenty-six episodes in the first season. Make Part 2 already so I can reason with people as to why this show is good without getting weird looks.

That being said, I would undo the fact that in Soul Eater, everyone on the good side survives. . Just because the anime in based on a manga doesn't mean you should follow the manga. There were times when Crona, Death the Kid, BLACKā STAR, and Lord Death could have died, but they didn't. Considering the situation and the fact that nearly every villain is killed, the heroes get off scott free in a high stakes match. In the manga, it makes sense because they were necessary for the cause later on, but those arcs aren't even covered in the anime. It's one of the rarer times when I wished death upon a character.
