OH, you should keep Pokémon Sun!! I haven't finished moon but you totally should play, it's so fun and we can trade pokemon and fill our dexes together if you wanna go for it! It is such a fun game, and you might think it'll totally consume your life, but honestly there's so much level-grinding involved that it gets boring after a while.

I kind of feel for you with this dilemma of yours. I'm not sure what I might do if I were to suddenly get either Pokemon Sun or Pokemon Moon. My issue is that I would be unsure about if I actually had the time to really play the game to its fullest. A lot of these games are pretty involved nowadays.
Despite that, I say go ahead and play Pokemon Sun. It has some cool new Pokemon, an interesting story, and it defies the traditions of all the previous Pokemon games.
As for whether or not to get either of the Gen. III remakes, I'd think you could probably just pass up on those at this point. The only real reason to get them would be so you could capture some of the Legendary Pokemon and Starter Pokemon that the games contain over to Pokemon Sun once they update that Pokemon Bank to make it compatible with Sun and Moon. The designers loaded up OmegaRuby and AlphaSapphire with all of the Legendary Pokemon and Starter Pokemon from Generations 2 though 5.
