First off, the Vis Comm prof is a big old douche.
Second, if he honestly hasn't even bothered to use windows since the early '90s, how does he know the program hasn't massively improved since then? Stupid facking Mac elitist sonofa- *shot*

Art has a pretty broad definition... you can always say you don't find a particular type of art all that appealing, but you can't just up and claim that it's not art AT ALL.
As far as I'm concerned, art is Art if there's effort involved, and the better one's skill (or talent, though talent is not necessary to be masterful) the better the art. Anything can be art.
But that doesn't mean everything is art, and I really detest the phrase "it has meaning for me, therefore it's art".
Using photoshop on my laptop made me appreciate the Microsoft laptop. I prefer CS3 over CS4 on the macs from school anyways. Yay right mouse clicker thingy....lol. I just learned how to download and install fonts yesterday. Nifty stuff. Do you get any humor from people not knowing how to use a PC?
