Yeah, from what I've read it is possible to skip over that stuff. I might just make a side file so I can do all the war quests and make it easy on my soul. This is a problem, I have a conscience. :T

This. That it saved Ulfric is just a coincidence- Alduin was there for one reason alone- you.
As for the war thing, I'm personally choosing to ignore it. I always play as a Redguard, and thinking as a Redguard who just happened to get caught up in this mess on his travels, I don't see a reason to get involved. Skyrim isn't my country, so why involve myself in a war that doesn't concern me? Just my way of thinking, anyway.
Really, the only reason you might want to do the Civil War quest is because it affects one mission in the main quest towards the end. Other than that, you can completely ignore the war altogether. Although, apparently it's possible to switch sides at anytime in the war, and apparently there's a Daedric weapon that gets stronger if you kill one of your (former) allies. So....get the sword, join one side, betray them and go on a massive killing spree, maybe? >8D
Also, if you want the , achievements/trophies, make an alternate character just for that questline, like I did.
According to Yahtzee Crowshaw, it apparently doesn't make a bit of difference (guys) which side you choose because the balls are inert apparently you have to save the world anyway, so you end up favoring both sides by proxy.
I am a wood elf! I was a wood elf in Oblivion, too. (And a dark elf, because I had two characters.)
Or, if I misread that, and you meant, "Which side of the civil war are you playing for?", then I'm probably going to join the Legion. I haven't picked one yet, but the civil war quests are some of the only ones I have left, so I'mma have to pick a side soon. :V
Well, the dragon saves Ulfric, but also me, the Dovhakiin, and I don't think an explanation is really given for why Alduin attacks the town anyway. (Honey dragon don't give a shit?) I just assumed it was something like Alduin sensing the Dovahkiin. And this is me after having been reading a ton of pages on the Elder Scrolls wiki about the lore and dragons and stuff.
But yeah, either way, I'm conflicted. It almost feels like no matter which path I choose, game six is going to screw with my choice.
Right? I've spent an absurd amount of time trying to decide which faction to join. I think I'll probably end up going with the Legion, but dammit if it doesn't rankle some.
I figure that ultimately (and you'll get more information on this as you progress the main quest), the civil war is really benefiting the Thalmor. It weakens Skyrim AND the Empire. The longer Ulfric (who really is a racist son of a bitch) prolongs the war, the better chances of the Thalmor gaining a foothold in the Empire, which will bleed into Skyrim. There's also the fact that a dragon saves Ulfric from being killed in the beginning of the game, and the dragons are indisputably bad. Both sides hate them. So if the big bad of the game is saving the leader of the Stormcloaks, I gotta figure there's something up.
Anyway, that's my reasoning. But I agree that banning Talos worship and stomping on Skyrim's cultural identity is pretty crappy. The game does a good job of making both sides seem like legitimate causes.
EDIT: ALSO, I'm always a wood elf as well! But I'm totes a sneaky-sneak. It's fun to riddle your enemies with arrows before they even know you're there. >D
