Actually, over in your neck of the woods the style of horchata that might be made is closer to the original that started in Spain which uses chufa (tiger nuts), cinnamon, and sugar. I'd like to make that type but getting chufa is quite difficult here in the States.
I'm actually on my third experiment batch right not. I've changed up the type of cinnamon and did a mix of two different white rices. I will also be adding some milk to it, as that is also a way the Mexican horchata is done.
