You forgot Tears to Tiara. I didn't even know that it was from a video game until I started looking for the music and came up with the video game OST instead. It's a wonderful fantasy anime about 26 episodes that plays with mythology and theology and it's currently on my top ten anime ever!
I'll create a synopsis if you are interested.
And I still need to see Final Fantasy Unlimited. I stumbled on it when looking for a new fantasy anime YEARS ago, and then, I couldn't find it again. I'm glad I found someone who enjoyed it as much you did.

Persona 4: The Animation revolves around Yu Narukami (or the protagonist), a second year high school student from a city who moves to Inaba to live for a year with his uncle and cousin. After acquiring a mysterious power called "Persona", he embarks on a journey with his new friends to uncover the truth behind a bizarre series of murders involving the distorted TV World, as well as a phenomenon called the "Midnight Channel". (stolen from wikipedia lol.)
You should try it, it was just recently released in English. It's about 26 episodes long. The English version is pretty good, but it's one of the few anime I personally like better in Japanese.
Fate/Stay Night was a visual novel and it's a huge one.
Persona is one of those series where I hear loads about but don't have a clue what it actually is, it's the same with Touhou Project. I think that's just a disadvantage of being British, we hear about these things later than everyone else.

I didn't know Fate/Stay Night was based on a video game. Personally I didn't like it at all, I hated the main character and Queen Arthur, seriously?
Anyway, I think Persona 4 the Animation was very good. I've never played the game but my brother has and he said it stayed very true to the game.
