Oh I'm glad you asked ^^ I'm a pretty thorough trainer when it comes to levels. What I do when I play is I level to or around my level cap depending on where I am in game. I also level up every Pokemon I catch equally. This means I spend a lot of time grinding. A LOT of time. Yes, this does get boring and mindless after a while so, to keep my tiny Usagi brain engaged in my current goal, I actually made myself a soundtrack for training my lovelies. If the music is catchy and upbeat or even fitting to what I'm doing, it's more of a jam session than leveling you know? It's hard to be bored with Simon Curtis singing Superhero in your skull candies you know? It really gets me pumped and ready to complete the task at hand.
Now the reason why I level every Pokemon equally is because I like my options. Say I'm going up against a gym that uses water like misty, but I feel like my bulbasaur isn't quite up to par to battle her. Not a problem if all my Pokemon (including pc Pokemon) are on the same level. I'll pull out Zeus or Sugar (Pikachu) and rock the gym with electric moves. I've been inexperienced before, I've been situations where I'd take the gym or elite four by storm if I had a different Pokemon leveled. That feeling sucks and makes me feel like I failed my team.
It's all about persistence, diligence, will power, drive, and wanting to see those pixels you raised with your own hands reach heights that would have been impossible without you. Sure it's hard and time consuming but that feeling you get when you bring the storm, knowing you can take on anyone. That is the feeling I love. That is the feeling I'm forever chasing.
For me, raising and leveling is more of a pride thing. Not pride in myself but pride in my team. Each and every member. They're the ones that do the work you know? I have it easy I just give the orders ^^;; sorry went on a silly tangent there it's just these games are special to me.
The best way to level is to study the game you're playing. I can't tell you how much time I've spent studying various games on Bulbapedia. I study type effectiveness and the areas around me with the highest levels of wild Pokemon and train there for certain Pokemon and move around a bit for the others. If your Pokemon has effective moves against the wild Pokemon of the area, grinding will go by much faster. Knowing the move set you'd like each of your Pokemon to end up with late game helps too. That way you're not sitting and thinking if you want one more over the other when you're leveling.
Sorry, super long answer is super long and nerdy =x I'm a total nerd so I have no problem studying and building a great team. I also find that not worrying about nature's helps a lot too. Sure, would it be nice to get the perfect nature with the ability you want? Yeah, totally. Will it happen every time? Nope. Not a chance. I usually Cath the first Pokemon of its type I encounter and I'm more than happy with it ^^ I hope this long list of rambling helps ^^;;
Also I'm so sorry I so long to reply! I wanted to make sure you had adequate information.

I recently started playing Pokemon Fire Red on a GBA emulator app on my phone. It's a lot of fun. Since Pokemon Go I kind of wanted to play a few of the older Pokemon Games to train up Pokemon and battle them.
Anyway I'm trying to get my Pokemon all around the same level? What are your tricks of the trade so to speak? No matter how hard I try I keep getting a few Pokemon higher levels than the others. Anything would be helpful thanks. Signed,
