1) I think you can only get that dressphere in a certain chapter( either 2 or 3 I can't remember) But you get it in the Macchanlia Woods by speaking to Tromell( I think that's his name).
2) You can get the alchemist by going to the Calm Lands if Clasko has set up the chocobo ranch. In the ranch there are a bunch of fiends and Clasko asks your help to get rid of them and if you do then he gives you that as a reward.
Oh gosh! I remember Yojimbo... I hated him and his stupid dog XD I forgot how I beat him. I needed my cousin's help tho XD You definitely need the alchemist dressphere probably and obviously stock up on potions and such. But good luck, I am sure you will find a way. There is always Google though if you need more help. Take care
I do remember how I beat Garik. I had Paine use her special dressphere Full Throttle. That helped A LOT. I didn't even need Yuna or Rikku
