I agree, I hate branding of the "best thing ever." I always get resistant when a series is really popular. I am not sure why... and often the hype ruins the show because of too high expectations.
However a reputation is usually there for a reason...
I think Cowboy Bebop is certainly a classic and very good, but the best anime series ever?
I wouldn't know I haven't seen them all. lol

When I first saw Cowboy Bebop, it was one of the later episodes. After that, I saw about four or five episodes, out of order, including the last one. The sad thing was that the ending was spoiled for me before I even saw it.
About a year and a half ago, I resolved to watch the whole thing in order to see what The Best Anime of All Time was about.
At first, I was thoroughly disappointed. A lot of the stuff just went over my head, and not enough things were explained to keep me interested at first. I even put the anime on hold for months at a time because watching it wasn't a rewarding experience for me.
I could see why someone would like it, though. The look and feel of it is very realistic. The guys you're rooting for don't always win. In fact, most of the time, they lose. Despite that, some poetic justice is still served.
It wasn't until the last three episodes that the series grew on me. Everything seemed to fall into place and make sense. I don't agree that it's The Best Anime of All Time, but then again, I hate the term "best of all time" because that dismisses the possibility that there will be something in the future to top it. Still, Cowboy Bebop is a very unique anime, and I'd certainly recommend it, especially to someone who isn't a fan of typical shounen and shoujo stereotypes.
Call it karma. Call it luck. Me, I just don't give a... BOUNCE!

I have only seen bits and parts of it and maybe at least 5 episodes and I still think it's cool! Maybe one day I'll watch the rest of it....
