I was hesitating with the second one (their swords/his sword) but eventually I had made the right choice. I probably have made quite a lot of mistakes with 'Everybody' and 'Everyone'.
Really, there's no strange conflict at all; aesthetically, "his or her" flat-out isn't very pretty.
So for you, I wholeheartedly recommend the "don't use it" fix. Instead of saying "everyone", use a plural form word like "all" or "people". Then, you can happily and safely use "their" as your coordinating pronoun.
And all shall be golden for ya. That work well enough for ya?

Very nice. I make the 'everyone/everybody' mistake all the time. It happens to be one of the grammer mistakes my professors ignore. You're more help than they are.
I liked this. It's a good reminder that everyone is fallible when writing. Even though I concider myself more "polished" than others, I know I've commited this grammar crime.

Even prior to reading this, I think I was vaguely aware of the everyone/their construct being incorrect, but I still made that mistake all the time. I guess now I'll have to make more of an effort. ^^;
